If we just drop a DL back into a zone or area in the middle of the field to defend that area and NOT the player, it should be ok. I don't see them asking the DL to cover a TE on a route or anything like that. Just clog up the passing lanes over the middle.

Yup, I can see that. But then again, they just have Hoecht do the same thing. Tht actually seems like the best solution to me. Have Hoecht rush some of the time. Or even most of the time. But when he does drop in coverage have him defend a short zone rather than try to stick to a TE.
I think you said it well and we both agree. They key will be "how" they drop into coverage and how often.
