I rewatched the Cowboys game again and Gurley was lights out. Speed, special cuts, power, everything. So unless he got hurt after the Cowboys game, I don't believe that he had anything more than some soreness.
As the OP points out, the running game stalled because the Oline was overmatched in the SB. As to the Saints game, the issue was clearly the noise as far as the Rams running game. The linemen could not get off on the snap because they couldn't hear, and whereas in Dallas (which has just as good a defense as NO), Goff went on quick counts, got some encroachments, and kept the Dallas linemen off balance. In NO, there were getting beaten to the punch because they had issues and were forced to go to the silent count all game.
Neither Gurley, nor the Rams, nor anyone who has actually examined Todd Gurley has said anything about a debilitating injury, arthritis, or anything of the sort. People are speculating like mad, but all you need to know about what the Rams believe is that they let CJ Anderson walk for $1.3M and drafted one running back, a 5'8" change of pace back. That tells me that they have no concerns about Gurley going forward, or the front office is wholly incompetent. McVay even shot down that they Rams would put Gurley on a pitch count or manage his carries this year, a widely popular misconception floating around.
As an aside, Henderson was totally McVay's hand selected pick. They wanted THIS guy specifically, and traded up to get him. I suspect that he is going to play a significant role with the Rams, having nothing to do with TG.
