like them all but Scallops are #1 for me.
There are a few, very few, lakes in the very high country of the Sierra Nevada mountains that still have native trout. Back in my backpacking days I dined on them a few times. They are the best, simply the best. And all I had with me was some salt, pepper, a little lemon juice and a little oil.... then wrapped in aluminum foil and roasted over a small campfire.
BUT, and I'm sure I don't have to tell you this... ANYTHING dined on in the mountains.... and ESPECIALLY if off the beaten path in the wilderness, is simply devine... which I will now explain:
On my longest backpacking trip without a food resupply I had been on the trail for 2.5 weeks. Between meals, and for energy, I had some homemade gorp... mix of peanuts, coconut, raisins, some M&M's, I think some cashews as well. I was so sick of them after 5 days I could barely stomach the smell. You can only take so much of the same food every day. And this was 2.5 weeks IN!
Desperate, I emptied by food supply, which was nearly empty, and discovered a 'treasure' from a previous backpacking trip... it was probably a year old. It was an old "Slim Jim" with a piece of cheese included. You know them? Probably no more descriptive 'junk' food exists. Greasiest mixture of meat on the planet..... but after 2.5 weeks of gorp it may have been the greatest meal of my lifetime.
