If I may enter into the conversation....this will probably be the longest post I have ever had.
I am 5' 10" and last July my weight was 274....ish. Two nights before my annual blood work we had KFC. I ate one original recipe leg before eating dinner, I then ate 2 of the thights (love them to death) with half of the mashed potatoes w/ gravy (it was the family size meal for 2 of us) and half of the cole slaw (KFC has the best IMO). Then after dinner I put the food away I ate another leg and some slaw. THAT gives you an idea how I eat....amount wise.
I received a call from the nurse shortly after lab work results were complete to come in for consultation. I was a little concerned cause they told me my Glucose/blood sugar reading was 314 and A1C was over 9. I found out these numbers are REALLY BAD. Oh well, I am glutenous in nature. Food is my only addiction if you want to call it that, to me it is fitting to say.
So I was informed I was type 2 diabetic and had to take medicine and check my blood sugar twice a day. This was not something I was prepared for, but like somethings in my life if it is bad and I can do something about it I tend to attack it like a rabbid dog.
I had to see a nutritionist and my wife went with me and we took on this challenge together. We downloaded an app that lets me track the carbs (and fat, protein, calories etc.) it is called FatSecret. I found it to be easy to use and help me retard my eating habit instantly. It has helped me with portion control and honestly I measure most of my food now.`The app requires alot of interaction and I check out the foods that I might want in advance to give me an Idea of what the numbers are. I have gotten to a point where I know what is in store before I eat someting...just cause I have been doing it for a while now.
I jumped on this and with in 2 1/2 weeks my glucose reads were consistently in low 100's even going into the 90's. By August 4th I dropped 25 pounds and my clothes were fitting a lot better. Ultimately I was feeling better, not tired and not too hungry.
I went for lab work in Oct last year and my A1C was 4.9 I had had another reading in February this year and it was 5.1. Consequently I am off the meds and no longer have to check my blood sugar, but I still keep track of it about twice a week.
I eat alot more salads these days, I eat mashed potatoes, but measure out a 1/2 a cup, same with rice. I watch and measure beans, like chili and other beans that I like. I am now my weight is around 230-240...good weeks bad weeks.
I eat more fish like Salmon and tilapia, we blacken or just salt N pepper it and pan fry it with olive oil (which is very good for you).
I do eat pizza, stuffed crust even, BUT I eat one slice and cut another one in half and eat that. I do eat foods that have a good bit of carbs but I seriously control how much I eat at one time.
What I like to fix for breakfast and I eat often are a serving of egg whites together with one egg. added to that is one serving (2/3 cup of frozen potatoes Obrien), 2 oz. of breakfast sausage, about a 1/4 cup of pico de gallo. Sometimes I heat that up and mix in shredded asiago cheese.
That breakfast is about 15 carbs....
Bottom line it is hard to change a food life style...I hope the best for you as you deal with Carbs, I think they are addicting.
