I get that they are trying to prepare for any situation. But to take time and try and teach someone to use bad mechanics properly makes no sense to me.

They are not teaching Goff to use "bad mechanics properly." First off it;s a huge myth that throwing off your back foot is always wrong--sometimes you have no choice (can't escape the pocket & can't step up & the rush is closing in). And there are better and worse ways to do it. Maybe with a porous line a play like that will happen 2-3 times a game. The alternative is to teach your qb to take a sack. Which is better? Taking a sack or throwing a catchable ball in tough circumstances?
It's smart to know what to do while driving and you slide on ice. There's a better and worse way to do that. Learning the difference does not mean you intend to deliberately slide on ice all the time.
These guys have worked with Brees, Brady, and others. They are not these green neophytes who know less about qb mechanics than we do.
