I've never cooked a rib roast in my life so I'm no help. We used to buy a prime rib roast for Christmas dinner (RAMbeau always prepared and cooked it) but when the cost got to be around $110 for an 8 pound roast, we said "enough of that". Just too expensive. Last year for meat dishes we had a turkey breast and pork steaks. This year our meat dishes are a whole turkey and meatloaf. Not trying to impress anybody. It's just me and RAMbeau, 2 adult kids, daughter's boyfriend, and my 5 yr old grandson who will probably eat pizza since he only eats about 6 things. I do all the cooking and my family is happy to eat whatever I prepare. It doesn't have to be fancy and it won't be. We'll have side dishes and dessert and I'll load them up with leftovers to take home. For us it's about spending time together over a good meal.
