Are CBs that can cover man to man better/quicker than those that can't? . . . and thus more valuable ?
As you asked---NFl is 75% zone ... 19% cover-1, 4-5% cover 0. Cover-3 most common.
has some to do with speed but hips and being able to turn. And yes, running after someone is something you need speed.

Do CBs that are slower need to play zone or they will get beat regularly?

Is this why Deebo / niners do well against us (we play mostly zone?), but not so well against Sneed/McDuffie (man to man) in the Super Bowl?
Deebo is one of the lowest rated receivers in the league vs. man and best against zone.
Chiefs blitzed more in SB that usual. For season they Rams cover-1 21.6% of the time and Cover-0 5.9%, Zone about 82% of the time.
Chiefs blitz rate for 2023 season - 31.2%, Rams 28.8% --- pass down blitz --- Chiefs 34.2%, Rams 36.7% and Rams stunted line and Lbers more

Is zone a "safe" defense when you lack talented CBs/safeties? or have a DC who is "less than aggressive"?
1. Zones take away explosive plays more than man-to-man and limiting explosive plays is tied to winning in the analytics, it's why Fangio's match zone is so popular ...
2, Zones these days are match zones, so, you have a CB and a nickel back facing an outside receiver and a slot receiver once the routes are recognized, say it's a post by the outside guy and a corner by the slot, once the DBs see it they take the routes man to man ... so they need same skills ...
If it was man-lock, then the slot would take the slot gut no matter what, and the CB would take the WR on the post ... but they would have inside and deep help.
There are not the lines of demarkation there used to be.
Zone CBs play top down ... read and break to the play. Man corners trail and make plays from trail technique ... but it is also not that simple
