There are still some guys McVay coached with in Washington who are position coaches on other teams. Packers ILB coach Kirk Olivadotti for instance or Aubrey Pleasant also with the Packers.
The defensive staff of the Colts coached under Gruden in Vegas, so Sean might go that direction. However, Gus Bradley may want his own defense.
Lastly there is the in-house, which would be Henderson, if Morris doesn't poach him.
