Deferring is the way to go! The biggest benefit is the possibility to "double dip" - score a TD right before half and then scoring again on first possession of second half. Conceivably, a team can score 14 pts before the opposition ever gets the ball back. I'm sure most of you remember the trick play the Saints called on us last year up 21 points with only 10 mins left in game (which resulted in a 50 yard TD).
