Really, imo, the only thing that makes BBG suck something fierce is using fatty, grisly meat.. We have a place in town tha tI've gone to since I was a kid and never once gotten a bad piece of meat, whereas I've been to a few other places and never gotten GOOD meat..
but, we have these places with smoke rooms and whatnot that have been used NON-STOP without cleaning for decades.. Sounds gross, but its like seasoning a pan when your smoke house has that flavor and smoke and stuff built in from decades of use.. Definitely crazy good stuff - as long as they use good meat..
