It's a valid point. Last year the Rams' defense wasn't the Rams' until several games in. They allowed 71 points and 373 yards/game through the first three games. Three of their four worst yards allowed games in 2020 were those first three games.
That said, there are some obvious (and maybe not so obvious) "good and bad" things with the 2021 defense

Bad
45.5% 3rd downs conversions (26th)
4.7 yards-per-carry allowed (25th)
QB pressure % (hurries, hits and sacks) just 28th in the NFL
Oh and add to the bad that they're 27th in KOR coverage.
