Rams use a committee approach for RBs and WRs - which I like - as it causes more threats that a defense must account for.
What comes first, the chicken or the egg? It's possible the Rams use their WRs as a group because they don't have an elite stud like Jones. And it's likely that the Falcons use Julio almost exclusively because he's elite.
The key here is not about stats anyway. I'm inclined to agree with you that Jones' stat numbers would be lower in the Rams offense but that doesn't mean his presence wouldn't significantly upgrade the offense. It's more about matchups and impact.
Aaron Donald and Ramsey should teach us that the importance of having elite players and their impact goes far beyond the stat sheet.
