And Kupp falls into that category, IMO. He simply demands special attention from opposing D’s each week. And STILL has monster games.

Let's start with the agreement. I agree with your definition of untouchable. And I too believe we likely win the SB if Kupp were healthy. Or Gurley.
But...I'm still not ready to say that he's untouchable because I'm not seeing the special attention that he's getting each week or that the opposing team is specifically modifying their game plan to account for him.
The only players on the Rams that I believe that happens for, and that I hear the announcers mentioning that happens for are Goff, Gurley, and Donald. Maybe we can add Ramsey...
I've never heard anyone discuss that teams gear up to stop Kupp and I haven't heard DCs mentioning Kupp as someone they game plan around. Contrast that with Donald. Anytime an OC is talking about Donald, that's the first thing they mention. That he keeps them up at night and their entire plan starts with him.
I simply haven't heard Kupp's name in the opposing players or DCs mouths. Yet, I commonly hear Goff, Gurley, and Donald's names from the opposition.
