what you do is extend his contract then immediately do a restructure

of said contract. It sounds crazy but look at it this way.

Cooks is owed 8.5 mil this year. You extend him 5 years and say 70 million. Now he is basically on a 6 year 78.5 mil. dollar deal with the first year costing you still 8.5 million. There is no money saved on an extension.

Now, you restructure the new 6 year deal and take (for example) 6 million of this years base salary from the 8.5 million and turn it into a prorated bonus that will now be guaranteed over the remaining 5. So in this scenario he gets paid 2.5 million this year (his new lowered cap #) and adds 1.2 million per year more to his remaining 5 years (the 6 million converted bonus divided by 5 years)

Why would anyone do this? Because every player wants guaranteed money.
