I'm one who isn't completely sold on Goff, at least to the extent that I do believe it's more about McVay and his system/coaching than it is something unique about Goff. That isn't to say that he doesn't have talent or that he hasn't contributed to the success the Rams have had. I think his last couple of seasons "trying" to start clearly illustrate that his knee is destroyed. The guy is literally hobbled at this point. Many criticize him for the money that he's made but he gave up his long term health in exchange for it. The problem I have with something like a trimmed mean is that the data is already very limited. Taking 2 games out of an 8 game sample seems counterproductive in terms of analyzing how a player is playing. You mentioned not having Kupp as a potential reason there was a drop off in Goff's production.
