Blue cheese is normally not something I go for, although I like it on burgers more than as a salad dressing.

I'll certainly use it if it's the only dressing available.

As for liver, I've never been a fan. I don't care for organ meat, except I do like gizzards, and I had some heart that was pretty good.

What I really like? Calf fries. Or Rocky Mountain Oysters.

Little bit of horseradish sauce or marinara....oh man!! That is some good stuff.
