Mix of Hickory and Cherry... Hickory and Apple occasionally.

Actually I love the taste of mesquite BUT... it can easily be overpowering. I go very easy with mesquite.

Alder is recommended often and I've tried it but I haven't noticed it giving much flavor.... BUT... I've been cautious for perhaps I simply need to add more.

Do you soak your wood before adding it to the smoker? I'm reading conflicting thoughts on this. I haven't tried it yet. - JamesJM
