I can't remember the exact statistic, but only something like 7 or 8% of 6th and 7th round picks ever become starters. That doesn't mean of course that a higher percentage can't become contributors.
The point is that picking QBs is like putting a coin into one of those gumball with the prize machines and turning the handle. You may get a prize or you may just get the gumball. But either way you have to put that coin in the machine.
And I'm saying that it is definitely worth a 6th or 7th every year if you see a QB that you think has potential. They are and will remain the most valuable position, and hardest position to fill, on the team. It's a good but inexpensive bet.
