Having scoured the Rams contract situation myself I would agree that those are probably the Rams' only reasonable options for creating cap space.
Personally I am not in favor of cutting or trading Hav, but restructuring Goff or AD makes a lot of sense to me.

They could gain $7.2M by restructuring Goff without kicking too much cap down the road. Goff's cap hit this year is $36M ($10M salary, $21M roster bonus, $5M as the pro-rated portion of his signing bonus).
If they converted $9M of his salary to signing bonus that $9M would be spread evenly over the remaining 5 years of his contract: $1.8M a year ... and reduce his cap hit this year to $28.8M ($1M salary, $21M roster bonus, $5M pro-rated from his original signing bonus, $1.8M pro-rated from this new bonus).
Doing this wouldn't impact any trade scenarios since a restructure wouldn't push any additional money to his new team. In the unlikely event that the Rams cut Goff after the 2021 season it would add $5.4M to the dead money.

They could gain $12M in cap relief if they restructured AD like this:
Aaron Donald's cap hit this year is $25M. His salary in 2020 is $17M. If the Rams wanted to they could convert $15M of that salary to a bonus. That would reduce this year's cap by $12M but add $3M a year to the cap hits in 2021, 2022, 2023, and 2024.
Again there would be no impact on a trade scenario but in the unlikely event that they cut him after the 2021 season it would add $9M to his dead money.
