I agree part of the issue may be McVay's play calling. But, I challenge people to go back and see how often we are unable to attack down the middle...including the Red Zone.
Second, without doing the research, some of those teams that have Higbee/Everett type TEs may also have big bodied are at least physical type WRs that help make the difference. I can't say...because I didn't do the research. However, I'm betting a few do have such a player.
Personally...I look at Goff's game...and I think, based on that type of game, his type of QB, that a big bodied down the field TE would elevate his game...and prolong his career.
