The saying about bend-but-not-break defense goes back at least as far as the 1960s, when that was how the Cleveland Browns defense was described. Such a description may be appropriate for an entire defense but, as you say, it isn't applicable to a single player in the defense. A defense that bends a little can still be effective if it frequently forces drives to stall. That is why 3rd down percentage is such an important statistic. A player who is easy to beat is a liability to a defense.
It's pretty good, and generally has been since TruJo arrived. One exception was Finny's second year with Rams and his play fell off the edge of the world
