In Payton's 10 years as HC of Saints, they made the playoffs 5 times and won the SB.
In the other 40 years of the Saints history, they made the playoffs 5 times, and never sniffed a SB appearance.
I think many of us remember what the Saints were before Payton got there. They were fondly labelled the "AINTS", a team that never got remotely close to a SB, never mind winning one.
Sure, we can roll the dice with another assistant HC or college guy, and we may get lucky. My view is that the odds of success are better with Payton.
