Ok... this was my first batch... so here's what I will change with the next batch... not as sweet.. not sure of the ratio yet but definitely less sweet. More lemon peel per liter of alcohol.
The 'potency' isn't as bad as I made it out to be... it 'should' be potent. That I will leave alone ALTHOUGH I think I will use Vodka instead of EverClear next time.
That's about it. One rule you MUST adhere too - it has to be placed in a freezer at least overnight and it doesn't hurt to leave it there for 10 days or so. Limoncello demands to be extremely cold... even I can taste a BIG difference between simple refrigerator cold and freezer cold. THUS... it needs to be, I'd GUESS, at least 80 proof, (the finished product), so it won't freeze in the freezer.
My guess for the next batch.... equal parts alcohol and water.... but I'd put in less sugar. Perhaps - 350 grams per liter of water. This batch I used 500 grams.. it's very, VERY sweet.
