I didn't consider bourbon but that's a good idea.

Most of the recipes I've seen are much like what you said... simple... nothing too fancy... and yes, AFTER the brine add a rub for the other things.

I bought one of those remote electronic thermometers that i'll be using for the first time... hope I get it right. laughing smiley
