Upon further reflection, I'm thinking that the play was flagged because: A) not only was the ball not secured; B ) the receiver failed to establish himself as a runner; and C) Yeast went helmet-to-helmet?

That's a lot for a defender (especially a smaller one taking on a larger player) to process in a split-second. I don't know what a defender (who is already aiming low) is supposed to do when the offensive player instinctively goes low himself in order to protect from a hard hit.
