I don't think Hopkins has a leg up on Blanton. I also don't see either one being the second tight end, but rather, I see them sharing snaps opposite Higs. Hopkins wasn't drafted to be a blocker, but was more of a receiving threat.
I think they could indeed draft another TE or maybe move Harris back there. SKOW could bulk up a little and play there too. I have to say, this position doesn't worry me even a little bit.
Maybe because we usually play with 3 wide and Higs.
