If DWilliam repeats that same level of play this year...I'm keeping DWilliams cuz his hands are far more important in creating INTs.
I don't say this as a slight to Gilmore, I have not seen him play. I'd take the better overall CB..but I was blown away by D-Will's INTs last year...they were impossible catches for a WR. So, I'll take the CB that can create TOs...and so far D-Will gets my vote. But I'm a Rams homer and not too logical.
If DW has another outstanding year, he will want big money just like Gilmore. Is DW a shut down corner? He does have great hands like you pointed out. But, can he be that guy that can take on Metcalf or the other big receivers from time to time in a game. Like you, I have not seen much of Gilmore other than playoff or Superbowl games. He does have the experience that DW does not have. Gilmore has been All Pro. Would you prefer two All Pros versus one and DW?
