If what you mean by "restructure" is give back money, no one ever does that (or it's so rare it amounts to nada).
The way restructuring works in the NFL, though, a player can shift money around in their contract, moving hits to future years. They get the same amount it's just structured differently. That might help short term but it adds up long term.
I don't know if you were doing this, but I see some people use the word "restructure" to mean a player gives money back, but that's not really what the word means.
