Well, you can still see if a WR handles press coverage, makes the correct sight adjustments, runs routes the right way, etc. IOW you can tell if a WR is doing his job right even if the QB is sub-par. Plus, you can evaluate hands, body control, RAC, etc. on balls that do make it to the WR (even if the number of balls that are on target are fewer than ideal). So maybe you see 50 catches for 700 yards instead of 70 catches for 1,000 ... but you can still get a decent read on the WR.
