I don't think people would dispute that you need a good O to do well in the NFL. The NFL rules are built for Offense, so if your Offense can't score, you aren't going to do well.
Take SF for an example. Their scoring defense depends on their scoring offense. People might not feel that way because they may think that SF's defense is always good... but remember that SF is only good, when they have an uninjured QB.

Biggest difference was whether or not they had a healthy QB that season.. otw, if the offense fails, the defense will fail too.
It's not just McVay and the Rams. I would feel that it is generally the league.
The real question with McVay is that can he return to having a top offense.
Rams were #1 and #2 in scoring offense in the first 2 seasons of McVay. He was a novelty. Now people figured it him out much more than they did the first 2 seasons. Remember Fangio and what he did to Goff and eventually what Belichick took from that game to implement in the Super Bowl.
A glass half empty person may look at the 2021 season and say... Rams were #7 in scoring offense.. that actually seems low. McVay has the weapons, how could he not have a top 5 offense? That to me is the key question. Otherwise, I thought it was obvious that Offense drives the league. If you are get out to a 20 point lead, it makes it so much easier for the Defense to defend (unless you are the Atlanta Hawks)... more because it limits what the opponent can do in a short period of time down 20.
