Interim Head Coach/Special Teams Coordinator – John Fassel (Still here)
Assistant Head Coach/Offensive Coordinator – Rob Boras (TE Coach, Buffalo Bills)

Passing Game Coordinator/Wide Receivers – Mike Groh (OC - Philadelphia Eagles)
Quarterbacks – Chris Weinke (QB Coach - University of Tennessee)
Running Backs – Skip Peete (Still Here)

Defensive Coordinator – Gregg Williams (DC- NY Jets)
Senior Defensive Assistant – Chuck Cecil (DC- Arizona Cardinals)
Linebackers – Frank Bush (Asst. HC & LB's - NY Jets)
Secondary – Dennard Wilson (Passing game coordinator - NY Jets)

I found a few others:

Assistant Head Coach - Dave McGinnis - Went from Rams to the Tennessee Titans radio team. He's the gameday color analyst and is a weekly contributor on The Zone.
Defensive Quality Control - Jeff Imamura - Went from Rams.to Carolina Panthers but was fired in 2018 after the week 13 game. He's now a Defensive Analyst at Vanderbilt.
Assistant Defensive Line - Clyde Simmons - Went from Rams to Cleveland Browns. Now the Defensive Line coach at Missouri Baptist University in St. Louis.
Tight Ends - John Lilly - Went from Rams to U. of Tennessee as asst to head coach for 1 year. He's now TE coach for Cleveland Browns.
Offensive Line - Paul Boudreau - Went from Rams to retirement, from what I can tell. He's 69 yr old.
Secondary - Brandon Fisher - Not sure he did much of anything when he first left the Rams. His wife was about to have a baby back then and I think he chose to stay home and chill in Montana for a while. Now he's the Defensive Coordinator for Southern Utah University in Cedar City, Utah. I noticed he's the only SU coach without a published email address or twitter handle. Maybe he's trying to fly under the radar since he's Jeff's kid.
