Thats it right there.
Humans make mistakes. Players do, coaches do, and officials do.
For some reason, people refuse to allow one group of humans to be human. No one guaranteed anyone that the officials would be perfect.
The key is to understand that there are about 150 plays in a football game, and you don't want to have to depend on the officials not making a mistake somewhere along the way for you to win.
IMO, the Saints made so many mistakes in that game, both players and coaches, and they want to point to one specific mistake made by the officials as the only reason they lost.
