Brees goes back 3-4 yards many times, and he makes it work...watch him.
Yes, Goff needs to make it work, and so he is learning....he has a long way to go to fulfill his talent. His talent is outrageously big.

Brees takes deeper drops than most (Wilson too) because of their lack of height but Brees works up in the pocket as well as any QB.

What Goff is doing, he sets at a good depth but "at times" when he feels the rush he drifts BACK instead of up in to the pocket. It's a flaw in his game that needs cleaned up and something I'm certain McVay sees and is working with him on.

In rewatching the game I noticed the "pressure drift" also but something else I noticed is that in doing so it seemed as if he was putting himself in a position to roll out of pressure using his legs (which he does several times during the game). He may be better off stepping up (though that option was not always there as was noted by another poster) or it may be his way of dealing with pressure and extending plays will work better and become more polished in time?
