I think the rule is that if kicked into the end zone, and the ball isn't touched by the receiving team, it is a dead ball.
If it is touched by the receiving team, it is a live ball, however the receiving team can elect not to run it back and then it moves to the 25.
On a kick off the ball is live either in the field of play or the endzone. The receiving team must field the ball in both places. In the field of play the receiving team can fair catch the ball (that one I am pretty sure of) and in the endzone the receiving team must field the ball and then can take a knee to move the ball out to the 25 yardline.
A kickoff through or out of the endzone is a dead ball.
