Chef....naw...just a builder of dishes. To me it is similar to building a hot rod...the pride and joy when you're done. With cooking your get to enjoy the flavors, with the car you get to pay tickets! haha
With your smoker put diced beef (cube up a london broil or another type of meety beef roast) season it and put it in an aluminum foil pan (deep sides) with ground Chorizo sausage. Put that on the smoker for a couple of hours then add chopped onions, bell peppers (red, orange or yellow for color) and anything else you like in chili.
Let that cook / smoke for another 1/2 hour to hour stirring as needed. Let it sit, the flavors will start to meld together.
To me the next day is always the best...but it can be hard to wait
