I've never seen the need to declare a national champion in college football. When they began to try and find who was the "best" it seemed to me it would end up with the same 4 teams every year. This was due to the number of scholarships provided. Every high school player with talent with the eye to the NFL would want to end up playing for one of the big name colleges-those that will always be in the championship series. The only was to discourage this would be to limit the number of scholarships a college or university can give-thus spreading the talent. I also prefer the old "bowl" games (Rose Bowl, Cotton Bowl, Orange Bowl,, Sugar Bowl, and the arguments afterwards about who really was the best team. And your right about rivals. That was part of the excitement as well. Pac 10 vs Big 10. Always a team like USC, Stanford, etc in the Rose Bowl against teams like Wisconsin, Ohio State, etc. Now the Rose Bowl seems meaningless with any two teams from anywhere might play in it.
