Truth is I've never had a lobster "roll". However, I have had many a lobster both caught and purchased. Being a So Cal guy who loves to catch and eat those spiny things I have to admit: the east coast lobsters are better tasting-much sweeter-especially the meat in those big claws-something the west coast lobsters don't have.
IMO the best way to cook (west coast lobster) is after tearing your hands up-even with gloves on-you get back in the boat and rip the tails off. Then spit the tails in half. Take a frying pan and heat up some olive oil and butter. Then place the half tails face down and cook just enough to wear the meat will come out of the shell easy. Than drink two bottles of white wine-one for each half tail. Then don't fall overboard because the shells you now have thrown overboard will draw in sharks.
