Always a silver lining... and mine, during this quarantine, has come from my granddaughter... who fell in love with her 'cooking' HS class this year and thus has been cooking up new, (and quite involved and complicated), dinner entrée's at least 5 nights a week.
Now not all have gotten a 'thumbs up'... but most have. And a few max'd out the star rating system. PLUS...
We bought that new griddle I talked about here on the Pub earlier this year, also some other 'cooking appliances', and so experimentation has been the golden rule in my household lately.
I'm not a big fan of 'chicken'... I've probably mentioned that... other than old fashioned Okie Fried chicken there were VERY few ways I liked chicken. I didn't and don't 'dislike' chicken... it's just WAY down my list of favorites... BUT... with the new appliances, and recipe's, some of my recent chicken dinners have been OUTSTANDING.
We're now researching for what we think will make for the very best "Chicken Pot Pies".. homemade. Oh, did I fail to mention that? Yes... Chicken Pot Pie's I love... at least from a couple of local restaurants that specialized in them, (the best one closing their doors this year, BEFORE covid-19).... Costco's chicken pot pie is good.. maybe even very good, but not even close to those served up by those two restaurants. This will no doubt take several tries BUT... if we hit on it the effort will be WELL worth it. - JamesJM
