Used to have an annual Frog Feed. Hundreds of AG people. would come from all over central Calif.

I've never had 'fresh' rattlesnake BUT... a liquor store near the college I attended had canned rattlesnake. I had it many times. Nothing special. Also had Gator.... which I tired but I don't remember what it tasted like.
