Something I got addicted to in Mexico on dive trips, was an old Mayan pudding recipe called Maja Blanca.. They make it with and without corn.. I much prefer without corn..
I've tried to make it before.. Once with disastrous results, once actually pretty good.. The version I got in Mexico was NOT similar to the recipes I found, so had to improvise.. The primary ingredient is rice, but it was SO creamy, I couldn't figure it out.. I tried a coffee bean grinder on the uncooked rice.. It made a dust and I thought I had cracked the code... Until I cooked it and it was a lumpy mess..
So, I cooked the rice and blended it forever trying to make a puree.. It worked much better than the coffee bean grinder, but still not even close.. They can say what they want about the Mayans being primitive, and all, but they sure knew how to make frigging pudding...
