After all this talk about desserts, I made a 7-up cake yesterday afternoon (yup, it's a pound cake!). I'll be sending some home tonight with my daughter whose idea of baking is to raid my kitchen of whatever I'VE baked. Frank and I had 7-up cake with vanilla ice cream last night during halftime of the New England-Buffalo game. We both like to have some kind of dessert handy so a few times a month I'll whip up something I know we both like-- usually a cake or pie/cobbler. They're easy, quick and go great with ice cream!!
7-Up Cake recipe
Ingredients
2 sticks margarine or butter
1/2 cup Crisco (not the oil)
5 eggs
3 cups sugar
3 cups flour
7 oz. 7-up
1 teaspoon vanilla (optional)
Directions
1. Keep eggs and margarine at room temperature for 4 hours.
2. Heat oven to 325 degrees.
3. Grease and lightly flour a Bundt cake pan.
2. Beat margarine/butter, Crisco and sugar together.
3. Add eggs, 1 at a time and beat until fluffy.
4. Add flour alternately with 7-Up.
5. Bake about 1 hour and 15-25 minutes.
6. When done, take out of oven and let the cake cool in the bundt pan for 10 minutes.
7. Then invert the bundt pan on a cake plate. It will still be hot!
8. You may need to tap the bundt pan a few times with the handle of a knife.
The cake should slide right out onto the plate.
