I wish there was SOME way they'd do just ONE more. Even if it was just Kirk, Sulu and Chekov. Even if their time on film is brief. They'd HAVE to be retired in some fashion. Thing is, George Takei cannot stand Shatner and I thing Koenig's health isn't the greatest. Buuuuuuuut...I'm pretty sure it would seem hollow and a bummer without the others.
