Did not read the whole thread but saw people mentioning McVay likes using two te sets. This is incorrect, for last season at least.
The Rams almost entirely run a 11 formation. I can get specific numbers when I have more time but the Rams through all downs run 11. Higbee first and second and Everett third down(sometimes). Everett was most often spread wide on the barrier of the formation. Carrier would occassionally substitute in for Higbee.
Off the top of my head I would estimate McVay used two tighends less than 10 % of the time.
In McVay's closing commentary on the season press conference, he said that they ran a ton of 11 personnel this year but that's not really the goal. He of course wasn't too specific but he strongly implied that he'd like more 2 TE sets.
That would correspond to what he ran in Was.
So the light use of two TEs had something to do with not having a good enough 2nd TE to play with 2.
