Because they're gonna see pressure in the NFL. The ones who don't deal well with that are going to see more of it, too, since NFL defenses will sell out to get to you if you are unstable in that regard.
Also there is an avalanche effect with pressure. If a QB continues to suffer high pressure rates they can get worn down by it. But the QBs who have an ability to make something out of nothing and battle through pressures are always the ones I prefer. Even if things overall are not ideal in their offense. Because I don't think coaches can teach a QB that trait.
Re: Simpson he didn't suffer an inordinate amount of pressures compared to other QBs of this class. Nussmeier and Klubnik had it worse. Those teams had line issues that prevented them from seeing safe pockets. I'd say Simpson's line at Bama was better than most, though all of them had no running game in common.
Anyway the good thing with Simpson is he'll get great coaching and he has the mechanics and is close to being ready to play. Question is how good is he. That's where some of us differ on the player and hope we are wrong.
