Someone hit a powerpole last night, just down the road from my house. Been without power since about midnight.
The Ribs were great, ZN... thanks for the tip. The rub was fantastic. This was only my 4th attempt at using the smoker so I'm still learning, trying to get it perfect.
I'm adjusting timing, prep for the meat, amount of wood, etc.... everyone loved the Ribs last night but we all agreed I should have used a bit more Rub and also a little more smokey.... even though they were about the best ribs any of us had ever had.
Next up a Brisket. Then some Salmon.
I have to admit, ZN, (might have done this before), and risk losing my 'man card' but I've never been a very good chef... BBQ expert that is. What I love about the smoker is you really can't screw up, so it's helped my confidence out a lot and I'm eager to get better every time I use it.
I'm most anxious about fish, or rather seafood in general. I'm not, actually, that big of a red meat eater... even though I love it... I prefer seafood. - JamesJM
