You should be good with your choice. If you're close to the 405 or 5 freeways then your set. Just be aware that traffic on the freeways gets heavy after 9:00 AM even on Saturdays and Sundays.
You mentioned roller coasters and you can take the 5 freeway strait up to Six Flags Magic Mountain. Its pretty much a strait shot. From Huntington Beach I'd say over 1 hour's ride or more depending on traffic and if Cal-Trans is not working some road project on the freeway.
Keep in mind that the 5 freeway has been undergoing a widening project the last several months. Don't know what it will be like by the time the Bills game rolls around.
If you would like to visit Santa Monica Pier which has a funzone / Ferris Wheel etc and its a very nice area. Take the 405 north to the 10 freeway west. I believe for the pier you would get off on 4th or 5th by Santa Monica. You can also just follow the 10 freeway until it ends and becomes PCH 1 north. You will get to see the beautiful Santa Monica beach front community and you can shoot on up to Malibu and also Ventura and see some great coast line with some great places to eat along the way. Malibu is only 10 to 15 minutes down the road from Santa Monica.
Great points of interest if you like to hike around is the Adamson House in Malibu next to the Malibu Lagoon. Historic place that is haunted and is gorgeous. They do tours on Saturdays and Sundays. The Adamsons are one of the founding family's of Malibu.
